Here’s what I’ll be making for our upcoming Freezer Meal Swap (FMS).
1/3 cup pizza sauce
6 slices low fat beef and turkey pepperoni
2 tablespoons grated mozzarella cheese
1 teaspoon grated Parmesan cheese
one half long French roll
|Instructions:||Cut each roll in half. Spread 1/3 cup sauce over the cut side of each roll, sprinkle with grated cheeses and top with pepperoni and other desired optional toppings. Wrap each pizza tightly in foil or other freezer wrap of choice and freeze.
When you’re ready to eat dinner, here’s how to cook your pizzas:
Conventional Oven: Preheat oven to 350°F and place unwrapped pizza on a baking sheet. Bake for about 20-25 minutes or until heated through and cheese is melted.

I have not attempted this recipe yet, but it comes for a very trustworthy source (organized home)! But we make pizza enough, we should totally try it!
So here it is!
2 t active dry yeast
1 t sugar
1⁄2 t salt
3⁄4 c water, warm
2 T olive oil
For AUTOMATIC BREAD MACHINE, place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast. Select Dough setting and press Start.
For FOOD PROCESSOR, dissolve yeast and sugar in warm water in a measuring cup; let stand until bubbly–about 10 minutes. Stir in olive oil and salt. Insert metal blade or plastic dough blade. Place flour in work bowl. With motor running, pour yeast mixture through the feed tube in a steady stream, as fast as the flour absorbs it. When the dough forms a ball, stop the machine. Process continuously for 45 seconds to knead. Shape the dough in a ball, and place in greased bowl; turn to grease top. Let rise in a warm place until doubled–about 1 to 1 1/2 hours.

Sprinkle crust with grated mozzarella cheese.
Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
Gently spread marinara sauce to cover cheese and toppings.
Sprinkle with parmesan cheese and salt to taste.
To freeze: flash freeze pizza in pan.
When frozen, wrap in aluminum foil.
To prepare: do not thaw pizza.
Heat oven to 400°.
Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.
OK, I’m giving in…the ‘secret’ to my amazing BBQ 😉 sigh….
BBQ sauce – which ever style you prefer – are you NC style or Memphis?? Memphis all the way! 😉
Throw the chicken in the crock pot (I usually use 1lb of breasts, but, like to double to freeze)
Dump in ‘some’ BBQ sauce (can you have too much? No didn’t think so!)
Pour in 3/4 can Dr. Pepper (drink the remainder!)
Let simmer on low for 6-8 hours
Shred and put on buns!
4 cups apples, sliced & peeled
2 tbsp. flour
1/8 tsp. Nutmeg
1/2 tsp. Cinnamon
1 box “In Your Oven” for Pork
1/3 C. sugar
4 lean pork chops
Place apples in a well greased 9×9 dish. Mix sugar, flour, cinnamon and nutmeg. Sprinkle evenly on apples. Prepare pork chops as directed on package (shake with seasoning in bag). Arrange pork chops over apples and bake, uncovered for 45 mins at 375.
To freeze: Line baking dish with foil. Prepare as directed (but do not bake). Secure another sheet of foil and fold all sides. Freeze and then remove baking dish. Thaw for 24 hours in fridge. Bake uncovered for 45 minutes at 375.
Cooking instructions: Everything in the dish is fully cooked, so you just need to defrost and heat covered at 375 for about 1 hour (unitl bubbly). Uncover and turn the broiler on for the last few minutes to brown the topping.
1 lb egg noodles cooked and drained
1.25ish lbs ground beef browned and drained. (I use 85/15 so it’s still
1 lb once drained)
2 cans Campbell’s Cream of Mushroom soup
2 cans Campbell’s Cream of Chicken soup
1.5 – 2 cups Sour Cream (depending on your tastes)
1 can (15 oz?) corn drained, or frozen equivalent.
Combine all ingredients and spread in large casserole dish and sprinkle with topping:
1 stick melted butter
about 2 cups Progresso Italian bread crumbs (enough to make moist and crumbley)
Bake at 375 till bubbly, and broil to brown topping.
Burrito size tortillas
1 cn. of cr. of chicken soup
1 cn. of rotelle tomatoes
8 0z. of sour cream
Ground beef or shredded chicken
Pkg. of taco seasonings
2 cps of cheddar or Mexican cheese (i used a combo of both)
Mix soup, tomatoes, sour cream together in a large bowl. Mix taco seasonings w/ cooked meat. Layer a 9×13 pan w/ tortillas, sour cream mixture, meat and cheese (similar to a lasagna). Bake @ 350 for about 30 minutes or until golden brown.
I serve it w/ shredded lettuce and sour cream. I also serve chips and salsa & Mexican rice.
