Frozen Pizza


I have not attempted this recipe yet, but it comes for a very trustworthy source (organized home)! But we make pizza enough, we should totally try it!

So here it is!

2 c flour, all purpose
2 t active dry yeast
1 t sugar
1⁄2 t salt
3⁄4 c water, warm
2 T olive oil

For AUTOMATIC BREAD MACHINE, place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast. Select Dough setting and press Start.

For FOOD PROCESSOR, dissolve yeast and sugar in warm water in a measuring cup; let stand until bubbly–about 10 minutes. Stir in olive oil and salt. Insert metal blade or plastic dough blade. Place flour in work bowl. With motor running, pour yeast mixture through the feed tube in a steady stream, as fast as the flour absorbs it. When the dough forms a ball, stop the machine. Process continuously for 45 seconds to knead. Shape the dough in a ball, and place in greased bowl; turn to grease top. Let rise in a warm place until doubled–about 1 to 1 1/2 hours.

12 ounces mozzarella cheese, grated
1/4 lb Italian sausage, browned
1/4 lb ground beef, browned
1/4 cup onion, chopped and sauteed
2 ounces pepperoni slices
1 1/2 cups marinara sauce
2 tablespoons parmesan cheese, freshly grated
((We’re boring, so when we make this, we’ll just use cheese & pepperoni’s!))
Spray pizza pan with non-stick cooking spray or brush with olive oil.
Gently stretch pizza crust to fit pan, forming raised edge at lip.

Sprinkle crust with grated mozzarella cheese.
Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
Gently spread marinara sauce to cover cheese and toppings.
Sprinkle with parmesan cheese and salt to taste.
To freeze: flash freeze pizza in pan.
When frozen, wrap in aluminum foil.
To prepare: do not thaw pizza.
Heat oven to 400°.
Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.



2 loaves frozen bread dough
sliced mozzarella cheese
Meats: pepperoni, sausage, ham, etc…
Fillings: onion, peppers, olives, etc….

Thaw bread dough and using flour to roll out dough, make approx. 15 squares

Put cheese, meat and fillings on dough. Fold over and pinch edges to seal

Place each tunrover into a pc. of waxed paper. Store in large ziplock bag & freeze

To cook: bake from frozen in a 350 degree oven for 15 mins. on a greased ccookie sheet. Serve with red sauce.

Chicken Breasts
Bread Crumbs
Italian Seasoning
Sliced Ham
Swiss cheese
Toasted Hamburger Buns

Combine flour, bread crumbs and Italian Seasoning

Place thawed chicken breast in egg

Dip in Flour mixture

Melt butter in skillet on Med. High

Cook chicken in skillet

Place on oven-safe pan

Top with slice of ham and swiss cheese

Broil until cheese is melted

Put on toasted bun with mustard

1/4 cup vgetable oil
2 cups chopped yellow onions
1 cup chopped green bell peppers
1 cup chopped celery
1/8 cup chopped garlic
1 1/8 tsp. Essence (recipe follows)
3/4 tsp. salt
3/8 tsp. ground black pepper
1/8 tsp. cayenne pepper
2 bay leaves
2 lbs. cubed/shredded COOKED turkey meat
1 cup chopped tomatoes & their juices
8 cups water
1 1/4 cups med. grain white rice (about 1 1/8lbs.)
Hot sauce
1/2 cup chopped green onions
1/4 cup chopped parsley leaves

Emeril’s Creole Seasoning (Essence):

2.5 tbls. paprika
2 tbls. salt
2 tbls. garlic powder
1 tbls. black pepper
1 tbls. onion powder
1 tbls. cayenne pepper
1 tbls. dried leaf oregano
1 tbls. dried thyme
*Combine all these ingredients

In roasting pan (21x16x7) heat oil over med-high heat

Add onions, bell peppers, celery, garlic, Essence, salt, ppper, cayenne and bay leave & cook, stirring until vegetables are soft and starting to turn golden (about 15 mins)

Add turkey legs and meat, stir well

Add tomatoes & juices, cook, stirring, about 5 mins

Add rice, stir well

Add water, stir well to combine, bring to boil

Reduce heat, cover tightly cook without stirring until liquid is absorbed and rice is tender (about 35 mins), add water as needed if liquid if absorbed before rice is tendder

Remove from heat and let sit for 15 mins before serving

Remove bay leaves

Stir in green onions and parsley, serve hot

***Prep time: 30 minutes
***Cook time: 1 hr. 10 mins
***Yield: 10 servings

Oven-Baked Chicken Parmesan


4 chicken breasts
1egg, slightly beaten
3/4 cup Italian seasoned bread crumbs
1 jar Pasta sauce
1 cup shredded mozzarella cheese

Preheat oven to 400 degrees. Dip chicken in egg, then bread crumbs, coating well

In 9×13 dish, arrange chicken. Bake uncovered 20 minutes

Pour pasta sauce over chicken, top with cheese. Bake additional 10 minutes (or until chicken is no longer pink)

Serve with pasta

My Mama’s Sloppy Joes


1 lb. ground beef
1 small onion
1 tsp. salt
½ tsp. pepper
½ tsp. Worshashire sauce
2 tbs. flour
¾ cup ketchup (we add a lil more)

Brown meat, drain
Cook meat, salt, pepper, onion
Blend in flour
Add 1 ¼ cup water, worchashire sauce and ketchup
Simmer 15-20 minutes

Marvelous Mini-Meatloaves


1 lb. ground beef
1 pkg. (6 oz) Stove Top Stuffing
1 cup water

Then you have 4 options:

1. The Italian Option – Seasoning – 1 tsp. Italian Seasoning; Add-In – 3/4 cup Spaghetti Sauce; Cheese – 3/4 cup shredded Mozzarella

2. The Fiesta Option – Seasoning – 2 tsp. Chili Powder; Add-In – 3/4 cup salsa; Cheese – 3/4 cup Shredded Mexican

3. The Mediterranean Option – Seasoning – 1 tsp. dried Oregano leaves; Add-In – 3/4 cup roasted red peppers; Cheese – 3/4 cup feta cheese

4. The BBQ Option – Seasoning – 1 tsp. Garlic powder; Add-In – 3/4 cup BBQ sauce; Cheese – 3/4 cup shredded cheddar

Pick which option you’d like then –

Preheat oven to 375. Mix meat, stuffing mix, water and the Seasoning until well blended. Spray a muffin pan with cooking spray. Press meat mixture into muffin cups (not the paper kind, but you know, the metal muffin pan, lol) & make an indentation in center of each with back of spoon.

Spoon in Add-Ins into indentations

Bake 30 minutes (or until meatloaves are cooked through)

Top evenly with cheese; bake another 5 minutes (or until cheese is melted)

Let stand 10 minutes before serving

**Jazz it up a little – add 2 tbsp. of A-1 sauce to meat mixture.**
