Rice Krispie Treats


1/4 cup butter
10oz. marshmallows (4 cups mini)
6 cups Rice Krispies

Melt butter in lg. saucepan over low heat

Add marshmallows & stir until melted

Remove from heat

Add cereal

Stir until well coated

Use buttered spatula, press mixture into buttered 9×13 pan

Cut into squares when cool

Makes about 24 squares

S’mores Bars


8-10 whole graham crackers
1 pkg. fudge brownie mix (including ingredients needed for mix)
2 cups miniature marshmallows
1 cup chocolate chips
2/3 cup chopped peanuts

Arrange graham crackers in a layer in greased 9×13 baking dish
Prepare brownie mix according to package directions
Spread over crackers
Bake at 350 degrees for 25-30 minutes
Sprinkle marshmallows, chocolate chips and peanuts
Bake 5 minutes longer OR until marshmallows are slightly puffed and golden brown

½ cup butter
1 ½ cups graham cracker crumbs
14 oz. can of sweetened Condensed Milk
6 oz (1 cup) butterscotch chips
6 oz (1 cup) semi-sweet chocolate chips
1 cup chopped nuts
1 1/3 cup sweetened coconut flakes

Preheat oven to 325 degrees (350 for metal pan)
Melt butter in a 9×13 inch dish
Sprinkle crumbs over butter
Pour milk evenly on top of crumbs
Top with remaining ingredients in order
Press with fork
Bake for 20-25 minutes (until lightly browned)

Peach Enchiladas


2 tubes of crescent rolls
1 ½ cups of sugar
2 sticks of butter
1 tsp. cinnamon
1 can of peaches (quartered)
1 can of Mountain Dew

Melt butter
Add sugar and cinnamon
Unroll rolls and place peaches in each
(Roll from large end of crescent roll)
Place in 9x13in greased dish
Pour butter mixture over peaches
Pour Mountain Dew over peaches
Bake for 45 minutes at 350 degrees

Eclair Cake


2 – 3oz. boxes of instant vanilla pudding
½ of 9oz. container of cool whip
1 box of graham crackers
3 cups milk
1 container chocolate cake icing

Mix together pudding and milk until thick
Stir in cool whip (I usually microwave cool whip for about 25-30 seconds to make it     easier to stir in)
Place a layer of crackers in a 9x9in pan
Then pour in pudding
Alternate placing crackers and pudding into dish, making last layer crackers
Frost with chocolate icing
Chill in refrigerator for at least 2 hours before serving to allow pudding to thicken

1 cup real butter – divided
1 1/4 cup Coca-Cola® – divided
1 oz. square semi-sweet baking chocolate
3/4 cup miniature marshmallows
2 1/3 cups all-purpose flour
1 1/4 cup unsweetened cocoa powder – divided
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cup granulated sugar
1/2 cup shortening
1/2 cup vegetable oil
3 tsp. vanilla extract – divided
2 eggs
3/4 cup buttermilk
1/4 cup chocolate syrup
3 cups powdered sugar

In a saucepan, bring 1/2 cup butter, 1 cup cola, and chocolate to a boil
Remove from heat and stir in marshmallows until dissolved
Set aside and allow to cool to room temperature
In a bowl, Combine flour, 3/4 cup cocoa powder, baking powder, baking soda, and salt;     set aside
With an electric mixer, beat together sugar, shortening, oil, and 2 tsp. vanilla until fluffy;     beat in eggs and buttermilk
Beat in 1/2 of the dry mixture, scraping the sides of the bowl often
Beat in cooled cola mixture
Add remaining dry mixture and beat for 4 minutes; batter will be thick
Pour batter into a greased and floured 13x9inch baking pan
Bake on top rack of a 350 degree oven for 35-40 minutes, or until toothpick inserted in     center comes out clean
Cream butter with an electric mixer
Beat in 1/2 cup cocoa powder, 1/4 cup cola, chocolate syrup, and 1 tsp. vanilla
Slowly add powdered sugar, scraping the sides of the bowl often, while beating with the     mixer
If frosting seems dry, add small amounts of cola until you reach desired consistency
Frost cake while warm

Derby Pie

2 eggs
1 cup sugar
1/2 cup flour
1 stick butter (or margarine) softened
1/2 cup walnuts (optional)
1/2 cup semi-sweet chocolate chips
Ready made graham cracker pie crust

Separate bowl beat eggs with fork.
Then in large bowl mix by hand all ingredients (including eggs)
Together except nuts and chips .
Stir in nuts and chips at end. Pour into crust.
Bake at 350 approx 25-30 min. (should be light brown on top)
***special note*** the key to this pie is to make it ahead of time to let it sit long enough      to firm. I usually make it the night before. Let it cool. Then put in refrigerator until ready to serve the next day.

Chess Bars


1 box yellow cake mix
1 stick of butter
4 eggs
8 oz. cream cheese
1 lb. powdered sugar

Combine cake mix, 2 eggs and butter with a mixer on low-speed
Spread in 9×13 in greased dish
Mix together 2 eggs, sugar, cream cheese
Spread on top of cake mixture
Bake at 300 degrees for 45-50 minutes
