Strawberry Bread

A friend posted this on Facebook and I can’t wait to try it!

4 cups strawberries
3 1/8 Cup all-purpose flour
2 cups white sugar (plus a little to sprinkle on strawberries)
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 1/4 cup vegetable oil
4 eggs, beaten

Preheat oven to 350 degrees. Butter and flour (or spray) 2 9 x 5 inch loaf pans.
Slice strawberries* and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt, and baking soda in large bowl, mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans or on wire rack for 10 minutse. Turn loaves out and cool completely.

*When I make it again I will slice 2 cups and puree 2 cups. I think it will give the loaf a more strawberry flavor rather than bread flavor with bites of strawberries.

I tried the pizza crust tonight (well, started it yesterday…)

Can you tell from my tone?

Two thumbs down. I even pushed the plate away and left to clean our old apartment (that we will officially be OUT of tomorrow!)

Yeh, it was pretty bad. Not sure what went wrong, but, I don’t plan on retrying it to see if I can make it better. Just going to search for a better one!

Do you have a favorite homemade pizza crust recipe?

Sorry for the delay in this returning! Before we get to the treat, some housekeeping things. I mentioned that I would try to get a Mr. Linky up. Unfortunately, that’s before I knew you had to PAY for Mr. Linky! Sad times. So, for now, until I see how bug this gets (ie: does it warrent subscribing for Mr. Linky??) Just post here if you’re participating in Treats To Try (either by making the treat I’m trying OR posting your own T3 (Treats To Try) on your blog! I’d love it if you’d grab the button Cara made for this event and post it on your blog as well! (more people that see it, the more people that participate, I might just pay for Mr. Linky!) 😉

If you try the treat I mention, be sure to report back with your thoughts on it!

If you’re posting your own, who knows, I may pick your treat to try next! 🙂
