Eclair Cake


2 – 3oz. boxes of instant vanilla pudding
½ of 9oz. container of cool whip
1 box of graham crackers
3 cups milk
1 container chocolate cake icing

Mix together pudding and milk until thick
Stir in cool whip (I usually microwave cool whip for about 25-30 seconds to make it     easier to stir in)
Place a layer of crackers in a 9x9in pan
Then pour in pudding
Alternate placing crackers and pudding into dish, making last layer crackers
Frost with chocolate icing
Chill in refrigerator for at least 2 hours before serving to allow pudding to thicken
