Cheesy Chicken & Rice Casserole


4 chicken breasts, cooked and cut into bite-sized pieces
Salt and Pepper to taste
2 cups white rice, COOKED
1 can cream of chicken soup (Or Pepper Jack Cheese Soup)
2 cups shredded cheddar cheese
3 slices white bread – cubed

Preheat oven to 350 degrees

To cook chicken:
Season with salt and pepper, place in microwave-safe dish, cover and cook for 5-6 minutes (until no longer pink inside)
In 9×13 casserole dish, combine chicken, rice and soup – mix well
Top with cheese and bread cubes
Bake for 20 minutes (until cheese is melted and bread is crunchy)
